I was shopping around Walmart a few days ago and came across the Cinnamon Toast Crunch cake mix and was thinking how I can add a twist to this. I think boxed cake mix is a useful thing to have in your pantry for a quick and easy dessert. But it would also be fun to use the mix for something besides what it instructs on the box 🙂 

This cake combines chocolate with the nostalgic cinnamon kick of the beloved Cinnamon Toast Crunch, topped with sugary cinnamon glaze!

Simple ingredients for Cinnamon Toast Crunch Marble Cake 🥣

Unsalted butter: Provides moisture and richness to the chocolate batter.

Dutch processed cocoa & espresso powder: Offer a deep chocolate taste with a hint of coffee for complexity.

Eggs: Act as a binder and give the cake its structure.

All purpose flour: The base of the cake, providing the necessary gluten for texture.

Cinnamon Toast Crunch cake mix: Adds the unique cinnamon and cereal taste to the cake.

Neutral oil: Keeps the cake mix batter moist.

Powdered sugar & cinnamon: Create a sweet and spicy glaze that ties all the flavours together.

FAQ 🤔

Can I substitute regular cocoa powder for Dutch processed? Yes, but Dutch processed cocoa offers a smoother chocolate flavour.

What if I can’t find Cinnamon Toast Crunch cake mix? Use a vanilla cake mix and add 2 teaspoons of ground cinnamon as a substitute.

Tips & tricks 🪄

Marble effect: Alternate scooping the cake mix and chocolate batter into the pan. Or use a knife or a skewer to gently swirl the batters together for a marble effect.

Glaze consistency: Adjust the milk in the glaze to get the right pouring consistency. It should be thick yet pourable.

Cool before glazing: Let the cake cool completely before adding the glaze to prevent it from being too runny.

Description

Enjoy the perfect mix of marbled Cinnamon Toast Crunch and chocolate cake, glazed to perfection!

Ingredients

Units Scale

Chocolate batter

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup dutch processed cocoa
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon espresso powder, optional or instant coffee powder
  • 2 large eggs
  • 1/4 cup water, hot
  • 1/2 cup all purpose flour

Cinnamon Toast Crunch cake

  • 1/2 package of Cinnamon toast crunch cake mix
  • 2 eggs
  • 1/4 cup neutral oil
  • 1/2 cup water

Cinnamon glaze

  • 1/2 cup powdered sugar
  • 1/2 teaspoon cinnamon
  • 1–2 tablespoon milk add 1 tablespoon first, add the other if the glaze isn’t pourable

Instructions

Chocolate batter

  1. Preheat oven to 350°F (175°C) and line a 8×8 inch pan with parchment paper.
  2. In a medium bowl, whisk the melted butter and sugar until well combined.
  3. Mix in the cocoa, salt, baking powder, vanilla extract and espresso powder until combined.
  4. Mix in the eggs one at a time. Add in the hot water and mix until smooth.
  5. Mix in the flour and set aside.

Cinnamon toast crunch cake

  1. In a small bowl, add half the package of Cinnamon toast crunch cake mix until a small bowl and mix in the egg, neutral oil and water until smooth.

Assembly

  1. Add the batter into the baking dish alternating between the chocolate batter and cinnamon toast crunch cake batter.
  2. Bake for 35 minutes or until a toothpick inserted in the center comes out clean.
  3. In a medium bowl, whisk together the powdered sugar, cinnamon and milk to make the glaze. Once the cake has cooled, pour and spread the cinnamon glaze over the cake. Slice and serve!
