I recently tried a Millionaire Shortbread from a bakery last week and I thought what goes well with semi sweet chocolate – peanut butter! What’s a classic peanut butter chocolate combo? Reese’s peanut butter cups. So I decided to make a Reese’s Millionaire Shortbread with peanut butter caramel topped with Reese’s cups! Simple as that.
What is a Millionaire Shortbread?
Millionaire shortbread is a three-layered dessert with a shortbread base, caramel middle, and chocolate topping. Originating from Scotland, it’s known for its rich flavour and texture contrast!
Simple ingredients for Reese's Millionaire Shortbread 🥜🍫
Unsalted butter: Adds richness to the shortbread and caramel layers, creating a melt-in-your-mouth texture.
Sugar: White sugar sweetens the shortbread, while brown sugar in the caramel adds a deeper flavour.
Egg yolk: Binds the shortbread ingredients.
All purpose flour: Gives the shortbread its structure.
Sweetened condensed milk: The backbone of the caramel, it thickens and sweetens simultaneously.
Peanut butter: Introduces a nutty dept to the caramel. I used natural unsweetened peanut butter.
Heavy cream and semi-wweet chocolate: Combine to create a rich and silky ganache topping.
Reese’s Peanut Butter Cups: The star of the show. Add it whole or chopped up to the ganache!

Can I use milk chocolate instead of semi-sweet? You can but I wouldn’t recommend as milk chocolate is very sweet.
Tips & tricks 🪄
Chill between layers: After adding the peanut butter caramel layer, give it enough time to set in the fridge before pouring over the chocolate ganache. This ensures distinct, clean layers and prevents the layers from mixing into each other.
Smooth ganache secret: For a silky-smooth chocolate ganache, make sure your heavy cream is hot enough to melt the chocolate chips without needing to reheat. If the ganache seems too thick, add a little bit more warm heavy cream.
Perfect cuts: For clean slices without cracking the chocolate layer, dip your knife in hot water and wipe it dry before each cut. This heats the knife just enough to slice through the chocolate smoothly without causing it to shatter!
For this Reese’s Millionaire Shortbread, I use a 8×8″ baking pan. I also recommend using a hand or stand mixer (stand mixers go on sale often so I’d wait until then 😉) to speed up the prep time and for creaming the butter and sugars. Ingredients
Shortbread
- 3/4 cup unsalted butter, room temp
- 1/4 cup granulated white sugar
- 1 egg yolk
- 1 teaspoon vanilla extract
- 2 cup all purpose flour
Peanut butter caramel
- 1 can sweetened condensed milk
- 1/2 cup light brown sugar
- 1/2 cup unsalted butter
- 1/2 cup all natural peanut butter, you can use regular pb but the added sugar might make the caramel too sweet!
- 1 teaspoon vanilla extract
Chocolate ganache
- 1/4 cup heavy cream, warmed
- 1 cup semi sweet chocolate
- 9 Reese’s chocolate, add as many as you’d like 🙂
Instructions
Shortbread

Preheat the oven to 350°F (175°C) and line a 9×9 inch baking dish with parchment paper.

In a medium bowl, beat together the butter and sugar until creamy.

Add the egg yolk and vanilla and beat until well combined. Then, add the flour and mix until crumbly.

Press the shortbread mixture into the baking dish and evenly press down into the pan. Bake for 20-25 minutes or until the edges of the shortbread are golden. Allow the shortbread to cool while you make the caramel.
Peanut butter caramel

In a medium sauce pan on medium heat, add the condensed milk, butter, brown sugar, peanut butter and vanilla and stir continuously until the ingredients are combined.

Bring the mixture to a boil and reduce to low while continuously stirring for 10-15 minutes. The mixture should be a caramel colour and thick.

Pour the mixture over the cooled shortbread crust. Place into the fridge for 30 minutes to set.
Chocolate ganache

Heat up the heavy cream in the microwave until warm. In a small bowl, add the chocolate chips and warm heavy cream and stir until smooth.

Take the baking dish out of the fridge and pour the ganache over the caramel and spread it evenly with a spatula. Feel free to make a nice design!

Press in the Reese’s chocolate into the ganache.

Allow the ganache to set before cutting. Enjoy!
