Fresh blueberries: The star of the show! Adds juiciness and that burst of freshness.
Cornstarch: Thickens the filling, giving it a nice consistency.
Lemon zest & juice: Brings a bright, citrusy contrast to the sweet blueberries.
Granulated sugar: Sweetens the filling and crumble.
All purpose flour: The foundation of the crumble, provides structure.
Unsalted butter: Brings richness and forms the crumbly texture we love. 💙
Egg yolk: Binds the crumble together, so it doesn’t fall apart.

Crowd pleaser: Loved by adults and kids alike.

FAQ 🤔
Can I use frozen blueberries? Yes, but don’t thaw them; use straight from the freezer to prevent the bars from becoming too soggy.
Any substitute for lemon? Orange zest and juice can work but will offer a slightly different flavour profile.
How to achieve the perfect crumble? Keep your butter cold and work quickly to avoid it melting.
Tips & tricks 🪄
Even layers: Use the bottom of a measuring cup or glass to press down the bottom crumble layer firmly. This ensures an even base that won’t fall apart when you add the filling.
Crumble topping: When adding the final crumble layer on top, don’t press it down too hard. You want it to remain light and, well, crumbly!
Let it coool. Patience is key. Allow the bars to cool completely in the pan before slicing. This waiting time helps the filling set and makes cutting cleaner and easier.
For these Blueberry Crumble Bars, I use a 9×9 inch baking pan. I also recommend using a hand or stand mixer (stand mixers go on sale often so I’d wait until then 😉) to speed up the prep time and for creaming the butter and sugars.
