Description

Fresh blueberries burst with flavour in these easy Blueberry Crumble Bars, paired with a crispy topping for the ultimate snack.

Ingredients

Blueberry mixture

  • 2 cups fresh blueberries
  • 2 teaspoon cornstarch
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice freshly squeezed
  • 1/4 cup granulated

Crumble

  • 1 1/4 cup all purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 cup unsalted butter room temp
  • 1 egg yolk large
  • 1 tablespoon brown sugar
  • 1 tablespoon granulated sugar

Instructions

  1. Preheat oven to 375°F (190°C). Prepare a 8×8 baking dish with parchment paper.
  2. In a medium bowl, mix in the blueberries, cornstarch, lemon zest and juice and sugar. Set aside.
  3. In large bowl, beat together the butter, flour, sugar, baking powder and egg yolk until crumbly.
  4. Sprinkle ⅔ of the crumble into the baking dish and evenly press down to compress the mixture.
  5. Pour in the blueberry mixture.
  6. Add the brown sugar and the remaining sugar to the rest of the crumble mixture. And sprinkle over the blueberries.
  7. Bake for 45 minutes or until the blueberries are bubbly and the crumble is crisp.
  8. It will be quite runny so cool completely before cutting into squares and enjoy!
