Description

Quick & easy No Bake Chocolate Oatmeal Bars—perfect for snacks and busy days! No oven needed, just deliciousness in every bite. Also gluten-free!


Ingredients

  • 1 cup unsalted butter
  • 1/4 cup brown sugar, packed
  • 1 teaspoon pure vanilla extract
  • 3 cups rolled oats
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon table salt
  • 1 cup semi sweet or dark chocolate chips
  • 1/2 cup peanut butter


Instructions

  1. Prepare the Pan: Line an 8-inch by 8-inch (20 cm x 20 cm) pan with parchment paper and set aside.
  2. Cook the Oats: In a medium saucepan, combine the butter, brown sugar, and vanilla extract. Heat over low heat until the butter is melted and the sugar is dissolved. Add the rolled oats, cinnamon, and kosher salt. Cook, stirring constantly, for 4 to 5 minutes until well combined and slightly toasted.
  3. Layer the Mixture: Pour half of the oat mixture into the prepared pan. Spread evenly and press firmly to form the base layer.
  4. Prepare the Chocolate Mixture: In a small microwave-safe bowl, combine the dark chocolate chips and peanut butter. Microwave on high in 30-second intervals, stirring after each, until melted and smooth.
  5. Assemble the Bars: Pour 3/4 of the chocolate-peanut butter mixture over the pressed oat layer, reserving about 1/4 cup for the topping. Cover with the remaining oat mixture, pressing it down gently. Drizzle the reserved chocolate-peanut butter mixture over the top layer.
  6. Chill and Serve: Refrigerate the bars for at least 4 hours, or until set. Once completely cooled, cut into 16 squares with a warm knife. Serve and enjoy!
