🥚 INGREDIENTS YOU'LL NEED
- All-purpose flour
- Cocoa powder
- Granulated sugar
- Baking powder
- Salt
- Semi-sweet chocolate chips
- Milk, any milk works but whole milk makes it slightly more tender
- Eggs
- Vanilla extract
- Vegetable oil
- Marshmallow fluff, you can use a regular marshmallow but it won’t be as gooey once it cools.

There’s something about sipping hot chocolate on a cold winter day, and these muffins are my way of capturing that feeling in a sweet (duh). Growing up in Canada, Tim Hortons was synonymous with cozy winter moments, and their hot chocolate inspired me to bring that same comfort into these muffins. Whether you’re snowed in or just looking for a treat that feels like a warm hug, these muffins deliver. 🙂
📝 HOW TO MAKE THIS RECIPE
1. Preheat your oven to 350℉ (175℃). Line a 12-cup muffin tin with paper liners.
2. In a large mixing bowl, whisk together the eggs, milk, vanilla extract, and vegetable oil until fully combined.
3. Add the flour, cocoa powder, sugar, baking powder, and salt to the wet ingredients. Mix until just combined—lumps are okay! Overmixing can make the muffins dense.
4. Gently fold in the chocolate chips, saving a few for topping if you like.
5. PRO TIP: Sprinkle a few grains of uncooked rice under each liner to absorb excess oil. This trick keeps the muffin bottoms nice and clean.
6. Scoop batter into the muffin cups, filling each about halfway. Add 1/2 to 1 teaspoon of marshmallow fluff to the centre of each muffin. Top with the remaining batter, filling the cups almost to the top. Sprinkle extra chocolate chips on top if desired.
7. Bake for 25 minutes, or until a toothpick inserted into the centre of a muffin comes out clean (avoiding the marshmallow centre).
8. Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely. Or enjoy them warm for maximum gooeyness!

Ingredients
- 1 1/2 cup (180g) all purpose flour
- 1/2 cup (60g) cocoa powder
- 1/2 cup (100g) granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup semi sweet chocolate chips
- 1 cup milk
- 2 eggs
- 1/2 teaspoon vanilla extract
- 1/3 cup vegetable oil
- 1/4 cup marshmallow fluff
Instructions
- Preheat your oven to 350℉ ( 175℃) and prepare a 12-cup muffin tin with paper liners. Protip: Sprinkle a small amount of uncooked rice under the muffin liners to absorb the excess oil.
- In a large bowl, whisk the eggs, milk, vanilla extract and vegetable oil together until combined.
- Then, mix in the the flour, cocoa powder, sugar, baking powder, and salt until just combined. Lumps are fine!
- Fold in the chocolate chips, reserving a few chocolate chips for topping the muffins (optional). Scoop the batter evenly between the 12 muffin cups until 50% full. Spoon 1/2 to 1 teaspoon of marshmallow fluff into the middle of each muffin cup. Scoop the remaining batter evenly between each muffin cup and top with the remaining chocolate chips (optional). Bake for about 25 minutes, or until a toothpick inserted into the centre of one of the muffins comes out clean.
