These Hot Chocolate Muffins are a cozy winter treat inspired by Tim Hortons! Rich cocoa, gooey marshmallow fluff, and melty chocolate chips make these muffins irresistibly indulgent. Perfect for breakfast, dessert, or a snack, they’ll warm you up on the chilliest days.

- 1 1/2 cup (180g) all purpose flour
- 1/2 cup (60g) cocoa powder
- 1/2 cup (100g) granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup semi sweet chocolate chips
- 1 cup milk
- 2 eggs
- 1/2 teaspoon vanilla extract
- 1/3 cup vegetable oil
- 1/4 cup marshmallow fluff
Instructions
- Preheat your oven to 350℉ ( 175℃) and prepare a 12-cup muffin tin with paper liners. Protip: Sprinkle a small amount of uncooked rice under the muffin liners to absorb the excess oil.
- In a large bowl, whisk the eggs, milk, vanilla extract and vegetable oil together until combined.
- Then, mix in the the flour, cocoa powder, sugar, baking powder, and salt until just combined. Lumps are fine!
- Fold in the chocolate chips, reserving a few chocolate chips for topping the muffins (optional). Scoop the batter evenly between the 12 muffin cups until 50% full. Spoon 1/2 to 1 teaspoon of marshmallow fluff into the middle of each muffin cup. Scoop the remaining batter evenly between each muffin cup and top with the remaining chocolate chips (optional). Bake for about 25 minutes, or until a toothpick inserted into the centre of one of the muffins comes out clean.
