A Personal Note on Holiday Baking
Growing up, the holidays were always about creating desserts that brought joy to others. These snowflake pastries combine the flavours I love—chocolate and warm spices—with the fun of making something festive and sharable. Whether you’re baking for a party or indulging in a quiet moment by the fire, these pastries will bring a little magic to your season.
📝 HOW TO MAKE THIS RECIPE
1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
2. Roll out the puff pastry sheets into 10-inch squares, then cut out 10-inch circles using a large plate or similar guide.
3. Place the first pastry circle on the baking sheet and spread it with Nutella, leaving a 1/2-inch border.
4. Spread Biscoff on the second pastry circle, also leaving a 1/2-inch border.
5. Align the two circles, Biscoff side down, on top of the Nutella layer. Gently press to seal.
6. Place a small bowl in the centre of the pastry to guide your cuts. Slice 16 even strips from the edge of the bowl to the outer edge.
7. Twist each pair of strips in opposite directions (one clockwise, the other counterclockwise) and pinch the ends together to form spikes.
8. Brush the entire snowflake with whisked egg yolk for a glossy finish. Bake for 30 minutes or until golden brown and puffed.
9. Let the pastry cool slightly before dusting with powdered sugar for a snowy effect.
☝🏻 Tips and tricks
- Keep It Cool: Cold puff pastry is easier to handle and bakes up flakier. Chill it briefly if it warms up during preparation.
- Twisting Technique: Twist gently to avoid tearing the delicate pastry layers.
- No Waste: Use the pastry scraps to make mini treats by spreading leftover Nutella or Biscoff and baking them alongside the snowflake.
- Storage: Store leftovers in an airtight container at room temperature for 2 days or refrigerate for up to 5 days.
Can I make these pastries ahead of time?
Yes! You can assemble the entire snowflake pastry and store it in the fridge, wrapped tightly in plastic wrap, for up to 24 hours. Brush with egg wash and bake fresh when you’re ready to serve. This makes it perfect for entertaining—less stress, more time with your guests.
What if I don’t have a small bowl for the centre guide?
No problem! You can eyeball the centre or lightly mark a circle using a cookie cutter or the bottom of a small cup. The guide simply helps you keep the strips evenly spaced for a polished look.
How do I keep the filling from oozing out during baking?
Make sure to leave a 1/2-inch border around the edges when spreading the Nutella and Biscoff, and gently press the two pastry layers together to seal them. Twisting the strips tightly will also help keep the filling in place.
These Nutella Biscoff Snowflake Pastries are the kind of dessert that looks stunning, tastes incredible, and brings a little extra sparkle to your holiday season. Whether you’re making them for a festive gathering or just to treat yourself, they’re a simple way to create a magical moment.
Happy baking and happy holidays! 🎄✨

Description
Celebrate the holidays with these stunning Nutella Biscoff Snowflake Pastries! Buttery, flaky puff pastry filled with gooey Nutella and spiced Biscoff spread, twisted into a snowflake design and dusted with powdered sugar. Easy to make, shareable, and irresistibly festive—perfect for parties or cozy family gatherings.
Ingredients
- 2 sheets (typically 10×15 inches), thawed according to package instructions
- 1/2 cup Nutella or any hazelnut spread
- 1/2 cup Biscoff spread, smooth or chunky, I used smooth
- 1 large egg yolk, used for egg wash
- Powdered sugar, for dusting
Instructions
- Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
- On a lightly floured surface (or on the parchment the pastry came in), roll out the thawed puff pastry sheet into a ~10 inch square. Use a large plate, or anything that is 10 inches, as a guide to cut out a 10 inch circle in each pastry sheet. It doesn’t have to be perfect, it’s better to use a guide that is larger than sheet so there is less waste! You should have 2 layers of circles for each snowflake pastry.
- Place the first pastry circle onto the prepared baking sheet. Spread Nutella evenly over the first pastry circle using a spoon or offset spatula, leaving a 1/2 inch margin.
- Spread the Biscoff spread evenly over the second pastry circle using a spoon or offset spatula, leaving a 1/2 inch margin.
- Using the parchment paper, line up the circles and flip the Biscoff pastry circle onto the Nutella pastry circle that should already be on the baking sheet. Gently press down to make sure the circles are securely stuck together.
- Place a small bowl (about 2-inch diameter) in the center of the top pastry layer to help guide your cuts.
- Using a sharp knife or a pizza cutter, cut 16 even slices from the edge of the bowl towards the outer edge of the pastry circle. These cuts will form the “spikes” of the snowflake.
- Take one slice and twist it clockwise twice. Take the adjacent slice to the right and twist it counterclockwise twice.
- Gently pinch the tail ends of the twisted slices together to form pointed “spikes.” Continue this twisting and pinching process with each pair of slices until all 16 slices are shaped into 8 distinct spikes.
- In a small bowl, whisk the egg yolk until smooth. Using a pastry brush, brush the egg yolk wash evenly over the entire surface of each snowflake pastry. This will give them a beautiful golden-brown sheen when baked.
- Bake for 30 minutes, or until the pastries are puffed and golden brown.
- Cool on the sheet. Once cooled, you can dust the pastries with powdered sugar.
