let's talk miso
Miso is a fermented soybean paste that brings an incredible depth of flavour to dishes with just a spoonful. It’s savoury, salty, and rich, making it a powerhouse ingredient for sauces, marinades, and soups. For this recipe, miso gives the salmon glaze a boost of umami and pairs beautifully with the sweetness of maple syrup or honey. Don’t skip it, it’s the secret to making this dish unforgettable!
📝 HOW TO MAKE THIS RECIPE
1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Season the salmon fillets with salt and pepper on both sides. Set aside while you make the glaze.
3. In a small bowl, whisk together the maple syrup, miso, lemon juice, soy sauce, fish sauce, and garlic until smooth. Spoon the glaze over the salmon, massaging it into the flesh for an even coating. Let the salmon marinate at room temperature while you prep the veggies.
4. Remove the string from each sugar snap pea by snapping the tip of the pea off and pull towards the middle. Repeat on the other tip.
5. In a medium bowl, toss the sugar snap peas with olive oil, red pepper flakes, and a pinch each of salt and pepper. Spread the peas in an even layer on the prepared baking sheet.
6. Roast the sugar snap peas in the oven for 5 minutes to get them started.
7. After the peas have roasted for 5 minutes, push them to the edges of the sheet pan to make room for the salmon. Place the salmon fillets skin-side down on the baking sheet.
8. Return the pan to the oven and roast for an additional 10-12 minutes, or until the salmon is opaque on top and flakes easily with a fork, and the sugar snap peas are crisp-tender.
9. Serve the salmon and sugar snap peas with fresh lemon wedges for squeezing. Pair with rice or a side salad
☝🏻 Tips and tricks
Substitute Your Veggies: This recipe is versatile, so feel free to swap out the sugar snap peas with other veggies like green beans, broccolini, or cherry tomatoes. Adjust the roasting time as needed.
Extra Glaze for Serving: If you’re a fan of saucy dishes, double the glaze recipe and reserve half for drizzling over the salmon and veggies right before serving.
Meal Prep: This dish reheats beautifully, so feel free to make extra for lunch the next day. Just store the salmon and veggies in an airtight container in the fridge for up to 3 days.
For a Crispier Salmon Skin: If you love crispy skin, broil the salmon for the last 1-2 minutes of roasting. Just keep an eye on it to prevent burning!
Can I use a different type of fish?
Yes! This glaze works well with other fish like trout or cod. Just look for fillets that are about 1 inch thick, or adjust the cooking time accordingly.
What’s a good substitute for miso?
While miso is unique, you can substitute a touch of soy sauce or tahini with a bit of salt to mimic its umami flavour. The flavour profile will be slightly different but still tasty!
How do I know when the salmon is done?
The salmon is cooked when it flakes easily with a fork and is opaque on top. Aim for an internal temperature of 145°F (63°C) if you’re using a meat thermometer.
This Miso Glazed Salmon is an easy, flavourful meal that’s perfect for a quick dinner or meal prep. With a mix of sweet, savoury, and umami notes, this dish is sure to impress! Serve it with rice, a simple side salad, or even some noodles, and enjoy a restaurant-quality meal in the comfort of your own kitchen.
